when I export from blender and import into ge my textures look like plastic and are extremely shiny? I'm sure it is something really easy, but I guess I'm just not proficient enough in blender yet. So what's the magic secret to making things like asphalt not look like plastic?

It's specular color and cos power.
Open up your material window in GE, and turn the specular color down to either .1, .1, .1 for vehicles or 0,0,0 for textures like asphalt and concrete.
Also play with your cos power. I typically would suggest a cos power of like 15 or 20 for asphalt, and higher for a vehicle or something painted.
